Mexican Pulled Chicken
All you Need:
Contents of Mexican Pulled Chicken seasoning pouch
4 Chicken breasts quartered
15-30 ml (1-2 tbsp) Vegetable oil
125 ml (1/2 cup) Finely diced tomatoes
30 ml (2 tbsp) Tomato paste
15 ml (1 tbsp) Cider vinegar
All you do:
In large bowl, toss chicken with oil, then add spices until meat is well coated. In a slow cooker, combine tomatoes, tomato paste & cider vinegar, then add chicken. Cook on low setting for approximately 4 hours or until chicken is fork tender. Shred chicken with 2 forks and stir into juices. Serve in soft corn taco shells, with your favourite toppings.
